PINAUPONG MANOK SA ASIN RECIPE

Equipment

  • 1 Banana Leaf or Foil cut to the diameter of the pot
  • 1 Butcher's Twine or heat resistant food-safe tie

Ingredients
  

  • 1 k Chicken Whole
  • 1 tbsp Salt
  • 1 tbsp Ground Black Pepper
  • 2 pcs Onion quartered
  • 1 head Garlic crushed
  • 1 pc Ginger sliced
  • 1 bucch lemon grass
  • ½ tsp msg - optional
  • 3 cups Salt
  • 1 pc Banana Leaf or Foil cut to the diameter of the pot
  • 2 liter Water
  • 3 tbsp Salt

Instructions
 

  • Disolve 3 tbsp salt in water and submerge chicken for at least 30 minutes(ideally 12hrs).
    1 k Chicken, 2 liter Water, 3 tbsp Salt
  • Level 3 cups salt or about 2 inches deep in the bottom of the pot and place banana leaf or foil on top.
    3 cups Salt, 1 pc Banana Leaf or Foil
  • Drain and dry chicken with paper towel and season chicken with mixed salt, pepper and msg(optional) inside and outside masaging to the entire chicken skin.
    1 tbsp Salt, 1 tbsp Ground Black Pepper, ½ tsp msg
  • Stuff chicken with lemon grass, onions, garlic and ginger.
    2 pcs Onion, 1 head Garlic, 1 pc Ginger, 1 bucch lemon grass
  • Tie chicken's legs together to secure stuffing.
  • Sit chicken on top of banana leaf/foil and cover with tight-fitting pot cover.
  • Cook in medium heat for 50 mins or until chicken is tender.
  • Serve with soy sauce and lemon/calamansi mixture dipping sauce.
