Disolve 3 tbsp salt in water and submerge chicken for at least 30 minutes(ideally 12hrs).
1 k Chicken, 2 liter Water, 3 tbsp Salt
Level 3 cups salt or about 2 inches deep in the bottom of the pot and place banana leaf or foil on top.

Drain and dry chicken with paper towel and season chicken with mixed salt, pepper and msg(optional) inside and outside masaging to the entire chicken skin.
1 tbsp Salt, 1 tbsp Ground Black Pepper, ½ tsp msg
Stuff chicken with lemon grass, onions, garlic and ginger.
2 pcs Onion, 1 head Garlic, 1 pc Ginger, 1 bucch lemon grass
Tie chicken's legs together to secure stuffing.
Sit chicken on top of banana leaf/foil and cover with tight-fitting pot cover.
Cook in medium heat for 50 mins or until chicken is tender.
Serve with soy sauce and lemon/calamansi mixture dipping sauce.
