CHICKEN TOCINO

Chicken Tocino is sweetened cured chicken fillet. This recipe is a simplified version recipe of Chicken Tocino. White vinegar is the popular dipping sauce.

This dish is usually a breakfast menu but you can also have it for lunch or dinner. This dish is best served with fried rice or garlic rice or even java rice and fried egg/sunny-side-up and atchara on the side to make it more fancy.

Ingredients
  

  • 1 kg Chicken - thigh with leg
  • ¼ cup cup sprite or 7-up
  • 1 cup Brown Sugar
  • 1 cup Patis
  • 2 tbsp knorr/maggi seasoning or equivalent
  • 6 butil Bawang - pino
  • ½ tsp Paminta - durog
  • 1 tbsp anaatto oil

Instructions
 

  • Hiwaan ng patahiris o pa-diagonal ang magkabilang thigh  at leg ng manok para madaling ma-absorb ang marinate nito.
    1 kg Chicken
  • Tunawin ang asukal sa sprite/7-up, seasoning at patis.
    ¼ cup cup sprite or 7-up, 1 cup Brown Sugar, 1 cup Patis, 2 tbsp knorr/maggi seasoning or equivalent
  • Isama ang bawang at paminta.
    6 butil Bawang, ½ tsp Paminta
  • Isama ang manok at haluing mabuti.
    1 kg Chicken
  • Imarinate sa refrigerator ng at least 2 hrs (ideally overnight).
  • Ilagay sa kawali ang manok(kasama ang natirang marinate) at lagyan ng 1/4 cup tubig, takpan at pakuluan sa katamtamang apoy.
  • Kapag malapit na maubos ang sabaw, ilagay ang annatto oil, pahinain ang apoy at alisin ang takip.
    1 tbsp anaatto oil
  • Iprito ng 2 mins sa mahinang apoy ang magkabilang side ng manok o hanggang sa maluto.
