BEEF KALDERETA
Beef Kaldereta is one of many dishes filipinos inherited from the spaniatds during the Spanish Regime. This dish is similar to beef stew in tomato-based sauce thickened with liver patè.

Ingredients
- ½ kg Beef cut into 2x2 inch cube
- 2 tbsp Cooking Oil
- 4 cloves Garlic finely chopped
- 1 med Onion sliced
- 2 cups Beef Cube
- 2 cups Water
- ¼ cup Banana Ketchup
- 1 med Red Bell Pepper cut into 2x2 inch cube
- 1 med Green Bell Pepper cut into 2x2 inch cube
- 4 tbsp Tomato Paste
- ¼ cup Liver Patè or Liver Spread
- 2 pcs Dried Bay Leaves
- 1 cup Carrot - fried cut 1 inch diagonally or 2x2 inch cube
- 1 small Potato - fried quartered
- 2 tbsp Patis
- 1 pinch Salt and Pepper to taste
Instructions
- Saute onion and garlic.2 tbsp Cooking Oil, 1 med Onion, 4 cloves Garlic
- Add in beef and black pepper and cook for 5 minutes or until the color turns light brown.½ kg Beef, 2 cups Beef Cube, 2 cups Water, ¼ cup Banana Ketchup, 1 med Red Bell Pepper, 1 med Green Bell Pepper, 4 tbsp Tomato Paste, ¼ cup Liver Patè or Liver Spread, 2 pcs Dried Bay Leaves, 1 pinch Salt and Pepper to taste
- Stir in water, beef cube, liver patè or liver spread, tomato sauce, banana ketchup, bay leaves and crushed pepper.
- Cook until it becomes tender.
- Add patis, fried potatoes and fried carrots. Simmer for 2 mins.1 cup Carrot - fried, 2 tbsp Patis, 1 small Potato - fried
- Serve with rice.

Storing and Heating Instructions:
- Store Beef Kaldereta in a sealed container in the fridge and consume within 2 days.
- Reheat in a covered pan in moderate heat and boil with small amount of water for 3 mins before serving.
- Microwave reheating instruction: Reheat in a microwave safe dish for 3 mins in full power.
