BIKO or SINUKMANI

BIKO is rice cake originated from the Philippines, also called SINUKMANI in Southern Tagalog. It is made up of coconut milk, brown sugar, anise and glutinous rice. Topping is usually Latik(curd) from coconut milk or caramel/yema. This is usually placed and served on banana leaves.

SINUKMANI is best served with brewed coffee or Kapeng Barako.

Ingredients
  

  • 2 cups Glutinous Rice
  • 1.5 cups Brown Sugar
  • 4 cups Coconut Milk
  • 0.5 tsp Salt
  • 0.5 pc Star Anise -optional

Instructions
 

  • Cook rice with coconut milk in low heat until it reduced in water.
    2 cups Glutinous Rice, 4 cups Coconut Milk
  • Add sugar, salt and star anise and mix until it completely dried up and becomes very sticky.
    1.5 cups Brown Sugar, 0.5 tsp Salt, 0.5 pc Star Anise
  • Place biko in a serving dish and flatten.
  • Serve with latic or roasted desiccated coconut.
