PALITAW
Palitaw is made with boiled formed ground glutinous rice. This is my mother’s usual recipe during New Year’s Eve, literally at exactly 12:00 midnight. This is due to Filipino superstition that while palitaw is floating, your life in the new year will be as light. My mother who is a natural believer in this superstition will always be in front of the stove while we are all setting the firecrackers outside the house, no matter how much we convinced her, she would insist on doing this every new year.
This is my favorite since I was little, I used to like it so much that I always ask my mother to make some even if it wasn’t new year, I just couldn’t have enough of it.

Ingredients
- 2 cups Galapong [Giniling na Malagkit na nilagyan ng tubig 2:1 ratio or 2 cups malagkit sa 1 cup tubig]
- 2 cups Fresh Kinudkod na Niyog o Desiccated Coconut
- 2 L Tubig
- 1 cup Asukal na Puti
- 2 tbsp Linga o Sesame Seeds -optional
Instructions
- Bilugin ang 1 kutsarang galapong at pisa-pisain hanggang sa makuha ang nais na hugis.
- Ihulog sa kumukulong tubig ang mga hinulmang galapong 5-6 piraso bawat hulog.
- Kapag lumutang na ang palitaw ay pwede na itong hanguin at ilagay sa malamig na tubig sa isang mangkok para hindi magdikit-dikit.
- Ulitin ang proseso hanggang sa maluto lahat ng palitaw.
- Paghaluin ang asukal at kinudkod na niyog.
- Patiktikin ang mga palitaw at pagulungin sa pinagsamang asukal at niyog at isalansan sa dahon ng niyog o sa isang bandehado o serving dish.
- Lagyan ng tinustang linga sa ibabaw - optional. (Paalaala: Hindi ito lubhang nakakaapekto sa lasa ng palitaw, ito ay nagsisilbing palamuti o garnish lamang.
