PINALAGITIK NA BABOY

Pinalagitik is a dish originally from Batangas, it’s like Adobong Iga as when adobo absorbed all the liquid sauce it makes a noise like “lagitik”(sizzle in English), hence the name. It is made of pork marinated with a mixture of soy sauce, vinegar, crushed garlic, and whole peppercorns and then cooked on its own marinate and cook until all liquid has fully absorbed by the meat. Just like adobo, this is one of many dishes that Filipinos inherited from the Spaniards during the Spanish regime, but Batangeños have their own term.

Philippine Adobo have millions of version depending on which part of the country you live in or how you were brought up by your family. And Batangeños definitely have their very own.

This recipe is very forgiving that you can’t go wrong with cooking it. Why not give it a try and just consider it as your own version.

How to cook PINALAGITIK NA BABOY:

Ingredients
  

  • ½ kg Pork Belly cut into 1.5 inch cubes
  • ½ cup Soy Sauce
  • 3 tbsp Vinegar white
  • 2 pcs Bay Leaves tear into 2 pcs
  • 1 tsp Whole Black Pepper
  • 4 cloves Garlic crushed

Instructions
 

  • Marinate pork in a cooking pot with the rest of the ingredients for at least 1 hour.
    ½ kg Pork Belly, ½ cup Soy Sauce, 3 tbsp Vinegar, 2 pcs Bay Leaves, 1 tsp Whole Black Pepper, 4 cloves Garlic
  • Boil and cook with its own marinate in low heat for 50 mins stirring every 15 mins.
  • When all fluids have been fully absorbed by the meat, mix around meat pieces until it sizzles ("lagitik") and the edges of the meat become darker and toasted (you may add 2 tbsp cooking oil when required). Mix around meat continuously while it sizzles for about 3 mins before finally switching off the stove.
  • Serve hot with rice.

Storage and Reheating Instructions of Pinalagitik na Baboy:

  • Store in a sealed container in the fridge and consume within 3 days.
  • Reheat in a covered pan on moderate heat and boil with a small amount of water for 3 mins and add 1 tbsp cooking oil and toss in a pan for 2 min before serving.
  • Microwave reheating instruction: Reheat in a microwave-safe dish for 3 mins at full power.
  • Make sure the food is piping hot before serving.
