LECHON KAWALI

Lechon Kawali is very similar to classic lechon but they differ in the process of cooking. This dish is usually made of fried pork belly.

This dish is best with dipping sauce mixture of soy sauce and white vinegar with finely chopped shallots.

Ingredients
  

  • ½ kg Pork Belly o Liempo
  • 1 L Tubig
  • 2 pcs Bay Leaves o Dahon ng Laurel
  • 6 butil Bawang - dinikdik
  • 1 tsp Pamintang Buo
  • 1 tsp Asin
  • Mantika - pang deep fry

Instructions
 

  • Ilaga ang liempo sa tubig na may asin, paminta, bawang at dahon ng laurel so loob ng 30 mins.
    ½ kg Pork Belly o Liempo, 1 L Tubig, 2 pcs Bay Leaves o Dahon ng Laurel, 6 butil Bawang, 1 tsp Pamintang Buo, 1 tsp Asin
  • Patiktikin ang liempo at tusukin ng tinidor ang balat.
  • Budburan ng asin ang liempo at ilagay sa refridgerator pra ma-marinate - 2 hrs or overnight.
    1 tsp Asin
  • I-deep fry ang liempo 15-20 mins each side sa katamtamang apoy o hanggang sa maluto.
    Mantika
  • Hiwain at ihain na may kasamang sawsawan na pinagsama-samang suka, toyo, sibuyas-pino at pamintang durog.
