PORK DINUGUAN

Pork Dinuguan is made up of small diced pork or diced pork intestines, cooked in vinegar with pork blood with a hint of chilli peppers. 

This dish can also be made with beef blood and beef intestines and is cooked exactly the same way as cooking pork dinuguan.

In the province, whenever there’s a special occassion where there’s a whole pig to butcher to cook for the occassion, dinuguan is always cooked as filipinos don’t like to waste food. This dish was created so that blood and intestines don’t go to waste. 

Dinuguan is notoriously paired with puto or hot pandesal, however, dinuguan is still commonly eat with plain boiled rice by majority of the Filipinos.

How to cook DINUGUAN:

Ingredients
  

  • 2 tbsp Mantika
  • 0.5 kg Pork Belly o liempo - cut into small cube
  • 2 tbsp Patis
  • 1 pinch Salt & Pepper
  • 4 butil Bawang - minced
  • 1 med Sibuyas - minced
  • ½ cup Suka/Vinegar
  • 2 cups Tubig
  • 2 cups Pork Blood +1/4 cup Suka
  • 2 pcs Sili mahaba; pang-sinigang; green

Instructions
 

  • Salain ang dugo at durugin ang namuong dugo sa salaan hanggang sa lumusot sa salaan ang namuong dugo. Lagyan ng 1/4 cup suka at haluin. I-set aside.
    2 cups Pork Blood
  • Maglagay ng mantika sa mainit na lutuan at ilagay ang karne. Lagyan ng patis, paminta at asin, halu-haluin hanggang sa matusta ng bahagya.
    2 tbsp Mantika, 0.5 kg Pork Belly o liempo, 2 tbsp Patis, 1 pinch Salt & Pepper
  • Ilagay ang karne sa gilid ng lutuan at ilagay ang bawang sa gitna ng lutuan, haluin ang bawang hanggang sa matusta ng bahagya at isunod ang sibuyas. Haluin ang sibuyas kasama ang bawang hanggang maging transparent o maluto ang sibuyas. Pagsama-samahin ang karne, sibuyas at bawang at lagyan ng 1/2 cup suka. Bayaang kumulo ng 2 min na hindi hinahalo pra maluto ang acid ng suka.
    4 butil Bawang, 1 med Sibuyas, ½ cup Suka/Vinegar
  • Pahinain ang apoy at lagyan ng tubig.
    2 cups Tubig
  • Ilagay ang dugo at haluin ng bahagya hanggang sa kumulo.
    2 cups Pork Blood
  • Isama ang sili at takpan ang lutuan. Pakuluin ng 2 min  sa mahinang apoy.
    2 pcs Sili
  • Tikman at i-adjust ang asim at alat ayon sa iyong panlasa.
  • Serve hot with rice or puto or hot pandesal.

Storage and Heating instructions of Dinuguan

  • Store in a sealed container in the fridge and consume within 2 days.
  • Reheat in a covered pan in moderate heat and boil with small amount of water for 3 mins before serving.
  • Microwave reheating instruction: Reheat in a covered microwave-safe dish for 5 mins in medium power.
  • Make sure food is pipping hot before serving.
