SUMAN SA IBOS

Suman sa Ibos is a Filipino snack made with glutinous rice soaked with lye water overnight. This is exactly the same way as making suman-sa-lihiya apart from how they are wrapped up. Suman-sa-Lihiya is wrapped in banana leaves while the latter is wrapped with coconut leaves or buri/palm tree leaves. The best when paired with hot brewed coffee or “Kapeng Barako”.

How to make SUMAN SA IBOS:

Equipment

  • 8 coconut or buri palm or banana leaves cleaned and dried

Ingredients
  

  • 2 cups Glutinous Rice rinsed and drained
  • ½ tsp Salt
  • 2 cups Coconut Milk
  • water for boiling

Instructions
 

  • Dissolve salt in coconut milk and add drained sticky rice and let it stand for 15-30 minutes.
    ½ tsp Salt, 2 cups Coconut Milk, 2 cups Glutinous Rice
  • Cook soaked rice in a pot and cook for at least 10 minutes over low heat while stirring constantly. Remove from heat and allow to cool.
  • Prepare coconut leaves by folding the leaves into a bucket shape and fill with a tablespoonful of sticky rice. Continue wrapping and secure the leaf by sealing or tying. Arrange wrapped suman sa ibos in a pot and cover with enough water. Bring into a boil for about 60 minutes or until rice is fully cooked.
  • Allow to cool. Place on a serving plate and dip in brown sugar.

Storage and Reheating Instructions of Suman sa Ibos:

  • Store in a sealed container in the fridge and consume within 2 days.
  • Steam for 15 mins before serving.
  • Microwave reheating instruction: Reheat in a microwave-safe dish for 3 mins at full power.
  • Make sure the food is piping hot before serving.
