CHICKEN AFRITADA

Chicken Afritada is one of the many dish Filipinos inherited from the Spaniards during the Spanish Regime.

This dish is also known as Afritadang Manok. This a dish consists of braised chicken cooked in a tomato-based sauce. Along with carrots, potatoes, onions, and red and green bell peppers and served on a bed of rice.

This dish is very similar to the Western’s and the American’s Chicken Casserole.

CHICKEN AFRITADA RECIPE

This recipe is a simplified version of Philippine Chicken Afritada. This recipe is a one-pot-dish for those who are looking for a quick meal dish.
Chicken afritada is the filipino version of Chicken Casserole.
Chicken is cooked slowly in tomato paste giving it thick tomato-ey sauce with the hint of paprika.

Ingredients
  

  • 6 pcs Chicken Thigh bone in
  • 2 med Onion sliced
  • 1 pc Green Bell Pepper cubed - 1 inch
  • 4 tbsp Tomato Paste
  • 1.5 tsp Salt or Fish Sauce
  • 1.5 cup Water
  • 1.5 small Potato peeled & sliced - 0.5 inch
  • 1.5 med Carrot peeled & sliced (diagonal) - 0.5 inch
  • 0.5 cup Frozen Peas -optional

Instructions
 

  • Scatter onions and green bell pepper in the bottom of the pan.
    6 pcs Chicken Thigh, 2 med Onion, 1 pc Green Bell Pepper, 4 tbsp Tomato Paste, 1.5 tsp Salt, 1.5 cup Water
  • Sprinkle salt and add in tomato paste.
  • Place chicken on top and add in water.
  • Boil and simmer in low heat for 30 mins.
  • Add in potato slices & carrots, stir and simmer for 5 mins.
    1.5 small Potato, 1.5 med Carrot
  • Add frozen peas, stir and conitue to simmer until peas are cooked.
    0.5 cup Frozen Peas
  • Serve hot with boiled rice.

Notes

Store in the fridge in a sealed container not more that 2 days.
Reheat in the microwave for 3 mins in full power.
