KILAWING LABANOS
Kilawing Labanos is made up of thin slices of labanos with saute’d thin slices of pork belly and pork liver slowly cooked with vinegar and annatto powder to enhanced the color.
I learned this from my grandmother which is originally from Batangas.
I haven’t seen this cooked in a restaurant or even in any eatery anywhere in the Philippines.
A mouth-watering unique and strong flavor from labanos and pork liver. This Kilawing Labanos is definitely one of a kind and worth a try.

How to cook KILAWING LABANOS (Batangas Style):

Ingredients
- 1 kg Labanos - hiwain ng maninipis lagyan ng asin at pigaan, hugasan at pigaan ng 2x beses para mabawasan ang pait
- ½ kg Pork - ilaga at hiwain ng maninipis
- ¼ kg Pork Liver - ilaga at hiwain ng maninipis
- 2 tbsp Mantika
- ¼ tsp Atchuete Powder
- 5 butil Bawang - pino
- 2 pc Sibuyas - hiwain ng maninipis
- 1 pinch Asin at Pamintang durog
- 1 cup Suka
- 2 tbsp Patis
- 1 pc Knorr Cube
- 1 cup Pinaglagaan ng Pork
Instructions
- Maglagay ng achuete powder sa mainit na mantika at haluin.2 tbsp Mantika, ¼ tsp Atchuete Powder
- Igisa ang bawang at sibuyas sa achuete oil.5 butil Bawang - pino, 2 pc Sibuyas - hiwain ng maninipis
- Isama ang pork at Pork Liver at haluing mabuti. Lagyan ng patis, asin at paminta at isama ang knorr cube.½ kg Pork - ilaga at hiwain ng maninipis, ¼ kg Pork Liver - ilaga at hiwain ng maninipis, 1 pinch Asin at Pamintang durog, 2 tbsp Patis, 1 pc Knorr Cube
- Isama ang labanos at pinaglagaan ng pork. Haluin at lagyan ng suka. Bayaang kumolo ng 3-4 mins na hindi hinahalo.1 kg Labanos - hiwain ng maninipis, 1 cup Suka, 1 cup Pinaglagaan ng Pork
- Haluin at hanggang sa maluto ang labanos.
- Tikman at i-adjust ang alat ayon sa iyong panlasa.
Kilawing Labanos Special Procedure to Remove Distinct Strong Flavor:
If you don’t like the extra punch or the distinct strong flavor of labanos, you can squeeze out extra juice of labanos.
- Sprinkle a generous amount of salt to thinly sliced labanos and mix.
- Set aside for 20 mins and squeeze out the juice.
- Rinse labanos with cold tap water 3 times to thoroughly remove saltiness of labanos.
