PINAKBET

Pinakbet is a traditional dish from the northern areas of the Philippines. This dish is prepared by sautéing a variety of vegetables in a sauce made from fish or shrimp. Bagoong is a fermented fish sauce that is used in the traditional Ilocano pinakbet. However, bagoong alamang is used in pinakbet that is prepared further south. Bitter melon, also known as ampalaya, is typically one of the ingredients in this meal, along with eggplant, tomato, okra, string beans, and chilli peppers. Ginger, onions, or garlic are frequently used as seasonings in this dish. In most cases, squash is included in Tagalog version.

The majority of these veggies are readily available and may be seen growing in the gardens and backyards of the majority of Ilocano homes. In the Tagalog preparation, the veggies’ natural flavours are brought even further by the addition of shrimp paste. In certain recipes, pork is replaced with lechon.

Ingredients
  

  • ¼ kg Pork - hiwain ng maliliit
  • 1 pc thumb sized Luya - hiwain ng manipis
  • 3 butil Bawang - pino
  • 1 med Sibuyas - hiwain ng manipis
  • 3 tbsp Bagoong Alamang
  • 6 pcs Okra
  • 1 cup Sitaw o Green Beans
  • 1 pc Talong - hiwain ng patahiris
  • 1 pc Ampalaya - hiwain ng patahiris
  • 1 cup Kalabasa - hiwain ng patahiris

Instructions
 

  • Igisa ang bawang,  sibuyas at luya sa katamtamang apoy.
    3 butil Bawang - pino, 1 med Sibuyas - hiwain ng manipis, 1 pc thumb sized Luya - hiwain ng manipis
  • Isama ang pork at halu-haluin ng 1-2 mins hanggang sa matusta ng bahagya o maging golden brown.
    ¼ kg Pork - hiwain ng maliliit
  • Lagyan ng bagoong, knorr cube at tubig at bayaang kumulo ng 1-2 mins.
    3 tbsp Bagoong Alamang
  • Isalansan ang ampalaya, okra, kalabasa, talong at sitaw, budburan ng paminta at takpan.
    6 pcs Okra, 1 cup Sitaw o Green Beans, 1 pc Talong - hiwain ng patahiris, 1 pc Ampalaya - hiwain ng patahiris, 1 cup Kalabasa - hiwain ng patahiris
  • Pakuluan ng 6-8 mins sa mahinang apoy hanggang sa maluto ang mga gulay.
  • Tikman at i-adjust ang alat ayon sa iyong panlasa bago ihain.

Pinakbet Storage and Reheating Instructions:

  • Store Pinakbet in a sealed container in the fridge and consume within 2 days.
  • Reheat in a covered pan in moderate heat and boil with small amount of water for 3 mins before serving.
  • Microwave reheating instruction: Reheat in a microwave safe dish for 3 mins in full power.
  • Make sure food is pipping hot before serving.
