How to cook PANCIT BIHON GUISADO:

Ingredients
  

  • 1/2 kg Chicken Meat
  • 5 cups Water
  • 1/2 tsp Salt
  • 1 tsp Ground Black Pepper
  • 2 tbsp Cooking Oil
  • 4 cloves Garlic minced
  • 1 med Onion thinly sliced
  • 1/2 cup Carrot cut into sticks or julienne cut
  • 1/2 cup Green Beans cut slim diagonal or french cut
  • 1 cup Cabbage cut thinly
  • 1/2 cup Toyo
  • 1 cup Chicharon or Pork Crackling - optional crushed
  • 250 grams Pancit Bihon or Rice Sticks Vermicelli

Instructions
 

  • Boil chicken in 5 cups water with 1/2 tsp salt & 1/2 tsp Pepper for 10 mins.
    1/2 kg Chicken Meat, 5 cups Water, 1/2 tsp Salt, 1 tsp Ground Black Pepper
  • Drain meat and save broth. Let cool and shred chicken meat into strips and set aside for topping.
  • Saute garlic and onions in oil.
    2 tbsp Cooking Oil, 4 cloves Garlic, 1 med Onion
  • Stir fry vegetables for 2 mins and scoop out vegetables in a bowl and set aside.
    1/2 cup Carrot, 1/2 cup Green Beans, 1 cup Cabbage
  • Add meat broth, soy sauce, and crushed chicharon and let it boil.
    1/2 cup Toyo, 1 cup Chicharon or Pork Crackling - optional
  • Add pancit bihon noodles and cook until most liquids are absorbed and the noodles are cooked (2-3 tbsp cooking oil may be added to prevent noodles from sticking to the bottom of the pan/wok). Sprinkle 1/2 tsp ground black pepper and mix well.
    250 grams Pancit Bihon or Rice Sticks Vermicelli
  • Transfer cooked pancit bihon into a serving dish, top with cooked vegetables and shredded chicken as topping.
