How to cook PANCIT CANTON:

This version is literally vegetable stir fry with egg noodles topped with lechon kawali.

Ingredients
  

  • 2 tbsp cooking oil
  • 4 cloves garlic peeled and chopped
  • 1 med onion onion, peeled and sliced
  • 1 pinch salt and pepper to taste
  • 0.5 cup green beans sliced diagonally
  • 0.5 cup carrots julienned
  • 1 cup cabbage chunky strips
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 cups chicken broth or 1 chicken cube
  • 250 grams pancit canton egg noodles
  • 1 cup lechon kawali (crispy fried pork belly) for topping

Instructions
 

  • Sautee garlic and onions in cooking oil and sprinkle ground black pepper.
    2 tbsp cooking oil, 4 cloves garlic, 1 med onion, 1 pinch salt and pepper to taste
  • Add in vegetables – carrots, green beans, cabbage and saute for 2 minutes.
    0.5 cup green beans, 0.5 cup carrots, 1 cup cabbage
  • Add in soy sauce and oyster sauce, stir in with vegetables and pour in chicken broth(or chicken cube & 2 cups water) and bring to a boil.
    2 tbsp soy sauce, 1 tbsp oyster sauce, 2 cups chicken broth or 1 chicken cube
  • Add in noodles and mix a few times to ensure it cooks evenly. Continue to stir until all the liquid has dried up and the noodles are cooked.
    250 grams pancit canton egg noodles
  • Taste and adjust seasoning, if needed. Serve with chopped lechon kawali on top.
